Coconut milk sweet sauce


Yesterday, I was telling you about my experiments in the kitchen. A bit of this, a bit of that and hopefully something nice to taste.

A few weeks ago I thought : "Hey, we do dulce de leche just by boiling condensed milk can for a few hours. Could I use the same process to make some kind of "dulce de coco" ?"

Well, I then realised that coconut milk is generally unsweetened. So the milk will not thicken upon boiling in the can.

Ok, then, let's try something else.

What can you use  to thicken a liquid : cornstarch!

So, again, here's an experiment that turns out pretty good!




Ingredients to make a little bowl of sauce :
  • 1 Tbsp caster sugar
  • 150ml of coconut milk
  • 1 tsp of cornstarch
  • 3 tsp water
  1. Mix the cornstarch and water together.
  2. Add them to the coconut milk and sugar.
  3. Cook on medium heat for 2-3 min, until it starts thickening.
You can serve this sauce with yesterday yummy coconut milk pancakes. Or add it to a yoghourt. Or porridge.

Or anything that needs a little coconut love...
